Does anyone know a way to make it so that the START and BACK buttons on a USB controller DON'T exit out of the emulator, and function as proper buttons within the game?

Which emulator are you using and have you tried configuring the settings within the emulator

Yes, I managed to get it to work, but with some emulators, the BACK key won't be mapped, and instead I get exited out of the keymapping dialog box.
The problem I'm having is with PSX4DROID... IIRC.

Yeah unfortunately psx4droid is outdated and has been replaced by a superior emulator, FPse. I would recommend using that in the future if you have not already.
